Background Information
A fine wine of elegance, fruit flavour and power balanced by firm fine grained tannins, Jack Mann is the finest Cabernet produced by Houghton. Accordingly, it is named after legendary Houghton winemaker, Jack Mann who presided over the winemaking for 51 consecutive vintages at Houghton. Jack’s unrelenting search for flavour and character and his desire to make wine to exacting standards was legendary within the industry.

Vineyard
Jack Mann Cabernet Sauvignon is a single vineyard wine from the Justin Vineyard in the Frankland River region of Western Australia. This region is characterised by cool winters, warm summer days and cool summer nights. The soils at Frankland River are degraded granite gravels that are some of the oldest in the world. The Cabernet grapes for this wine are hand harvested from a small patch of 46 year-old vines. The particular clone of Cabernet Sauvignon is an original Houghton clone selected by Jack Mann.

Vintage
The 2016 vintage was a strong red vintage in Frankland River. It was characterised by persistent warm to hot and dry conditions. The lower than average rainfall experienced in the preceding winter and spring was well below average, meaning the ripening and picking times were one to two weeks earlier than the long term average.

Winemaking
The grapes were hand-harvested and then sorted before de-stemming to small open top fermenters. The individual ferments were conducted with indigenous yeast which contributes to the complexity and texture of the wine. Following routine hand plunging, the ferments were pressed off at dryness and transferred to oak for malolactic fermentation. The wine was matured for 18 months in French oak barriques before the components were assessed and blended prior to filtration and bottling.
This vintage of Jack Mann is 92% Cabernet Sauvignon blended with 8 % Malbec.

Tasting Notes
The wine is deep red/purple in colour, with bright garnet hues. The bouquet displays black olive, lively scented red fruits, lavender, wild mint, boysenberry and blackcurrant aromas with a subtle overlay of sweet, nutty cinnamon and toasted vanillin oak. The palate is full-bodied with rich and sumptuous layers resulting in a wine with intensity, power and elegance. The dense, firm, fine grained tannin is beautifully integrated with the fruit and oak. Outstanding structure and balance will ensure great ageing potential and with careful cellaring, this wine will continue to develop in complexity over the next twenty years and beyond.
